Baked Poplettes

Ingredients

  • 3 potatoes
  • 4 eggs
  • ¾ cup grated parmesan cheese
  • ¼ cup shredded cheese
  • ½ cup vegetables (mix ‘n match)
    • Black beans
    • Green beans
    • Corn
    • Carrots
    • Cabbage
    • Broccoli
    • Cauliflower
  • 1½ cups breadcrumbs

Directions

  1. Start by boiling potatoes then place in a large bowl and mash with a fork or potato masher.
  2. As the potatoes cool, work on the rest of your vegetables. Make sure that whatever you are using is soft and cut into small pieces as needed. (Kernels of corn or black beans are a decent size.)
    • If you are using harder vegetables like carrots, squashes, broccoli or cauliflower they should be steamed or sauteed until they are tender.
    • If you are using anything canned you should drain then thoroughly, we want the mixture to be fairly dry.
  3. Go back to the bowl with the potatoes, and add grated Parmesan, 3 beaten eggs, and salt and pepper and 1 cup of breadcrumbs. Mix in the vegetables and shredded cheese.
  4. Work everything into a consistent mixture, then scoop out clumps and shape them into small balls (the size of a small egg). Roll them in flour then in the last beaten egg, then in the remaining breadcrumbs to coat.
  5. Bake for 25 minutes at 425°

Zucchini Casserole

Ingredients

  • 3 cups chopped zucchini and/or yellow squash
  • 1½ pounds ground turkey or hamburger
  • 3 cups cooked rice
  • ¾ cup shredded cheese
  • salt
  • pepper
  • garlic powder
  • olive oil

Directions

Fry chopped zucchini/squash lightly covered in oil, seasoned with garlic powder, salt, and seasoned salt until soft. Brown meat and season with salt and pepper. Mix cooked rice and meat in a 9X13 pan. Cover with squash and mix slightly. (The squash should be embedded in the top of the rice/meat mixture.) Cover with a thin layer of cheese. Bake at 375° for 15 minutes to melt the cheese in.

Cook time: 15 minutes

Squash Fry

Ingredients

  • 6 cups (about 4 medium) Zucchini/yellow squash
  • 2 pounds hamburger
  • 2 medium green bell peppers
  • Salt
  • Pepper
  • Garlic powder
  • seasoned salt
  • 1 Tbsp olive oil
  • 1 cup shredded cheese (optional)

Directions

Chop zucchini/squash into half inch cubes and begin to fry with olive oil over medium heat. Add garlic powder and seasoned salt to taste. While frying the squash, brown hamburger, salt and pepper to taste, and add finely chopped bell peppers. Combine meat mixture with squash (and cheese if desired) and continue to fry for 5 minutes to let flavors mingle.
