Brazilian Stroganoff

Ingredients

  • 1-2 chicken breast
  • 1 medium onion
  • 1-2 cloves garlic (½-1 tsp garlic powder)
  • 2 cups heavy cream
  • 1 cup ketchup
  • Mustard to taste

Directions

  1. Cube chicken
  2. Finely dice onion
  3. Finely chop garlic
  4. Brown chicken with onion and garlic
  5. Add heavy cream, ketchup, and mustard to cooked chicken and simmer until the sauce is the desired thickness.
  6. Serve over rice

The proportions here are approximate. We’ll adjust them based on experience after making it a couple of times.

Grilled chicken marinade

Ingredients

  • ⅓ – ½ cup Olive Oil
  • 3 tbsp Lemon Juice
  • 3 tbsp Soy Sauce
  • 2 tbsp Balsamic Vinegar
  • ¼ cup Brown Sugar
  • 1 tbsp Worcestershire Sauce
  • 3 Garlic Cloves minced or ½ tsp Garlic Powder
  • 1½ tsp Salt
  • 1 tsp Pepper

Directions

  1. Mix ingredients thoroughly in a ziplock bag big enough for your chicken.
  2. Stab chicken several times with a fork to ensure that marinade can seep throughout.
  3. Allow chicken to marinade at least 30 minutes after it is thawed before grilling it baking it. (If you start with chicken that isn’t thawed it should marinate longer—especially if you are refrigerating it as it marinates.)

Chicken Seasoning

This is a homemade seasoning that works as well as Zesty Lemon Seasoning. It’s not the same, just equally well received and as easy to use.

Ingredients

  • 1 tsp Salt
  • ¼ tsp garlic powder
  • ¼ tsp paprika
  • ⅛ tsp dill
  • ⅛ tsp ground cloves
  • ⅛ tsp ground ginger

Directions

Mix everything together well and then use the same way you would use Seasoned Salt.

Chicken pesto quinoa

Ingredients

  • 4 cups quinoa
  • 2 jars pesto
  • 1 bottle heavy whipping cream
  • Ranch dressing
  • Veggies (bell peppers, onions, tomatoes etc.)

Directions

Boil quinoa in 8 chips of water. Saute veggies. Mix pesto, whipping cream, and ranch. Then combine everything.

Little China Chicken

Ingredients
soy sauce
Mr. Yoshida’s sweet & savory marinade/cooking sauce
Chicken strips

Mix equal parts soy sauce and Mr. Yoshida’s in a frying pan. Place chicken strips in the pan and brown both sides over medium heat then add water, cover and simmer for 10 minutes to get the flavor fully through the chicken.

Easy grilled chicken

Two chicken breasts
Salt
Basil

Cut chicken breasts into strips (at least make sure they’re not too thick so the seasoning can go all the way through). Salt generously and sprinkle basil flakes. Turn the chicken over and season the second side likewise. Grill until the chicken is cooked through.

I did this with basil and it was wonderful but I suspect that you could use other seasonings such as oregano, thyme, etc. with good success.

Post Thanksgiving Stew

Ingredients

  • 10 cups water
  • 1 cup turkey
  • ½ cup chopped carrots
  • 1½ cups macoroni (optional)
  • ¼ tsp pepper
  • 1½ tbsp chicken bullion
  • 2 tsp salt
  • ¼ cup chopped celery (optional)
  • 4 cups potatoes (cubed)

Instructions
Bring water to a boil and add bullion, carrots, celery, potatoes salt and pepper. After 20 minutes (10 minutes if using previously cooked potatoes) add macoroni and boil for another 8 minutes before adding turkey for a final 2 minutes.

Prep time: 10 minutes
Cook time: 30 minutes

This makes a huge amount of food and the pasta gets soggy if you try serving it a day or more after making it. Think very carefully about how much you need before you decide to double this recipe. If you expect to have leftovers you should probably not include the macoroni.

Sanpete Chicken

Marinate/soak skinless chicken overnight or for at least 3-4 hours in a mixture that is about 2 parts sprite and 1 part soy sauce. Then it’s off to the grill. (You can also bake the chicken on a cast iron griddle that has been preheated.)

Chicken Squares

Ingredients

  • 3 oz Cream Cheese
  • 3 tbsp Butter melted
  • 2 cups Chicken cooked and cubed
  • ¼ tsp salt
  • ⅛ tsp pepper
  • 2 tbsp Milk
  • 1 tbsp Onion chopped
  • 2 packages Crescent Rolls

Directions

  1. Mix cream cheese, butter, chicken, salt, pepper, milk, and onion in a bowl.
  2. Separate the crescent roll dough into individual rolls. Separate rolls into sets of two. For each pair place the rolls together to form a triangle and press the edges to hold the triangle together.
  3. In each dough triangle place ⅛ of the chicken mix in the middle and fold the three corners up and over the chicken filling.
  4. Place chicken squares on a cookie sheet and bake at 325° for 19-20 minutes.
