Egg Salad

Ingredients

  • 8 large boiled eggs
  • ¼ cup mayonnaise
  • ¼ cup minced dill pickles
  • 2 tsp mustard
  • ½ tsp salt
  • Optional
    • ¼ tsp pepper
    • Some or all of the dill pickles can be replaced with ⅓ as much dried dill weed
    • Paprika to taste
    • Petite diced ham bits
    • Diced green onion

Directions

  1. Chop boiled eggs into pieces
  2. Add mayonnaise, mustard, dill, salt
  3. Stir all together
  4. Mix in optional ingredients of choice

Grilled chicken marinade

Ingredients

  • ⅓ – ½ cup Olive Oil
  • 3 tbsp Lemon Juice
  • 3 tbsp Soy Sauce
  • 2 tbsp Balsamic Vinegar
  • ¼ cup Brown Sugar
  • 1 tbsp Worcestershire Sauce
  • 3 Garlic Cloves minced or ½ tsp Garlic Powder
  • 1½ tsp Salt
  • 1 tsp Pepper

Directions

  1. Mix ingredients thoroughly in a ziplock bag big enough for your chicken.
  2. Stab chicken several times with a fork to ensure that marinade can seep throughout.
  3. Allow chicken to marinade at least 30 minutes after it is thawed before grilling it baking it. (If you start with chicken that isn’t thawed it should marinate longer—especially if you are refrigerating it as it marinates.)

Watermelon lemonade

  • 3 cups watermelon
  • ½ cup cucumber
  • ¼ cup fresh mint
  • 1 cup lemon juice
  • ½ cup sugar
  • 2 cups water
  • 2 cups ice

Sanpete Chicken

Marinate/soak skinless chicken overnight or for at least 3-4 hours in a mixture that is about 2 parts sprite and 1 part soy sauce. Then it’s off to the grill. (You can also bake the chicken on a cast iron griddle that has been preheated.)

Squash Fry

Ingredients

  • 6 cups (about 4 medium) Zucchini/yellow squash
  • 2 pounds hamburger
  • 2 medium green bell peppers
  • Salt
  • Pepper
  • Garlic powder
  • seasoned salt
  • 1 Tbsp olive oil
  • 1 cup shredded cheese (optional)

Directions

Chop zucchini/squash into half inch cubes and begin to fry with olive oil over medium heat. Add garlic powder and seasoned salt to taste. While frying the squash, brown hamburger, salt and pepper to taste, and add finely chopped bell peppers. Combine meat mixture with squash (and cheese if desired) and continue to fry for 5 minutes to let flavors mingle.

Red Chili

Ingredients

  • 1½ lbs ground turkey
  • 2 chopped onions
  • 1 chopped green pepper
  • 2 cloves garlic
  • 2 cans pinto/chili beans
  • 2 cans kidney beans
  • 2 cans diced tomatoes
  • 2 cans tomato paste
  • 1½ cans water
  • 1 tbsp pepper
  • 1½ tbsp cumin
  • 1-2 tbsp chili powder
  • 2 tbsp salt
  • ⅛ cup lemon juice

Directions

  1. Rinse kidney beans.
  2. Add beans, water, tomatoes and tomato paste to a pot and start to simmer.
  3. Cook ground turkey and add to pot.
  4. Saute onions, green pepper, and garlic until tender and add to pot.
  5. Add everything else together and simmer on low for at least 45 minutes stirring occasionally.
